Restaurant Kitchen Application

The use of Capture Jet technologies in commercial kitchens brings both financial and environmental benefits. A study carried out in a typical restaurant kitchen showed that a Capture Jet solution requires less exhaust air flow and replacement air than traditional systems, which lowers the air conditioning costs and gives instantaneous payback.

Application requirements

Comfort and productivity depend greatly on indoor conditions. Warm and hot thermal conditions result in an increase in accident rates, sick leave, and employee turnover. Application based on Halton Capture Jet canopies

A highly efficient KVF canopy utilising Halton Capture Jet technology allows the canopy to operate with up to 30% lower exhaust flows than traditional hoods. Small air jets direct the air toward the high-efficiency KSA grease filters, where the impurities and grease particles are separated from the exhaust air via the cyclone separation principle – for up to 95% removal of particles sized 8 microns or above.
Replacement air is distributed at low velocity into the space through the front face of the canopy. Individual supply nozzles are adjustable to produce increased velocities in the working zone near the cooking equipment. The solution comprises integrated lighting, balancing dampers on both supply and exhaust air connections, and TAB™ testing and balancing taps allowing accurate and simple balancing and commissioning of the site's air flows.

Halton Capture Jet canopies can be equipped with Water Wash option:

  • for automatic cleaning of the filters
  • to increase kitchen workers' productivity 
  • to provide improved hygiene
  • for reduction of maintenance fees, thanks to cleaner ductwork

Alternatively or additionally, the Capture Ray Ultraviolet option may be used

  • for grease destruction in the plenum and the ductwork
