Institutional Kitchen Applications

Halton Foodservice solutions for institutional kitchens are designed to provide excellent indoor climate conditions for the productive kitchen work, while taking the life-cycle costs of the kitchen into account as well.

Application requirements

Comfort and productivity are affected by indoor air, temperature, air velocity, and humidity but also by sound level and lighting conditions. Institutional kitchens are characterised by quite low heat loads and particle concentration and by the high humidity produced by the cooking process. Cooking appliances are placed in a large zone, where visibility is to be maintained.

Optimal solutions

Ventilated ceiling with Capture Jet system creates an aesthetically pleasing and open atmosphere for a central kitchen where heat loads are relatively low. Such a solution is suitable if the ceiling height doesn't allow installation of hoods.

The system provides:

  • Capture Jet systems to enable optimal extraction and thus better indoor air quality
  • High-efficiency filtration with cyclonic KSA extractors
  • Elimination of the risk of draughts and cross-contamination, thanks to the low-velocity supply air which also prevents condensation on the ceiling

Application based on Halton Capture Jet Ceiling

  • Exhaust efficiency is improved by a small Capture Jet installed on the ceiling surface. The air jet is projected horizontally across the ceiling, which helps to direct heat and impurities toward the exhaust.
  • Draught-free distribution of air into the working zone is performed from low-velocity ceiling-mounted panels.
  • The high-efficiency grease filtration uses Halton KSA multi-cyclone filters – up to 95% removal of  particles sized 8 microns or above – UL- and NSF-classified.

Halton Capture Jet Ceilings can be equipped with Water Wash option:

  • for automatic cleaning of the filters
  • for increased productivity of workers in the kitchen
  • to impprove hygiene
  • for reduction of maintenance fees, thanks to cleaner ductwork

Alternatively or additionally, the Capture Ray Ultraviolet option can be used

  • for grease destruction in the plenum and the ductwork
  • for reduction of maintenance costs
  • in reduction of fire hazard risk
  • for reduction of odour emissions
